Arcade machine – Info Linux

So would it be possible to use an old server inside a diy arcade cabinet. Then give it a trackball and mechanical keyboard as well as 4 Xbox one (or an open source controller if you know of any I could get) and allow it to run a bunch of different drivers for older titles (using the method in linus’ new video on LinusTechTips) and have a 1 click way to move from running decently modern titles to running Lakka on a VM using one GPU? Is this idea obtainable?

Is there a way to use windows and load all the things I would need and edit the driver info on the ubuntu download and all that so that I could plug in a flash drive and just by doing that the system would be up and running?
